    1. Dry the rack of ribs with a paper towel on both sides.
    2. Generously season the ribs with Sergio’s Seasoning.
    3. Add The Outlaw Rub to the ribs, coating them fully on the meat side, then let sit in the fridge for up to 12 hours.
    4. When ready to cook, preheat your grill to medium heat. If using a charcoal grill, set up the coals on one side for indirect grilling.
    5. Place the ribs, bone side down, on the cooler part of the grill (opposite the coals if using a charcoal grill). Close the lid and let the ribs cook for about 2 to 2.5 hours, maintaining a temperature around 275°F (135°C). The indirect heat will slowly cook the ribs, resulting in tender meat.
    6. Next, glaze with our Golden Steer Outlaw Barbecue Sauce (recipe here), close the lid, and cook for an additional 30 minutes, allowing the sauce to caramelize and create a sticky glaze.
