INGREDIENTS

  • 1 13x9 baking dish
  • 8-10 bone-in chicken thighs
  • 5 medium gold potatoes, peeled and quartered
  • 1/2 cup plain Greek yogurt
  • Sergio’s Seasoning and Table 40, to taste (approximately 1 heaping tbsp of each)
  • Extra Virgin Olive Oil (EVOO)
  • Freshly grated Parmigiano Reggiano
  • Finely chopped parsley for topping

DIRECTIONS

  1. Preheat your oven to the recommended temperature for baking.
  2. Take a baking dish and place the potatoes in it.
  3. Arrange the chicken on top of the potatoes in the baking dish.
  4. Drizzle olive oil over the potatoes and chicken.
  5. Sprinkle Sergio's Seasoning and Table 40 Seasoning and add yogurt to the mixture in the baking dish.
  6. Massage the mixture thoroughly, ensuring the chicken is well coated.
  7. Drizzle another layer of olive oil over the mixture.
  8. Generously sprinkle Parmesan cheese on top.
  9. Cover the baking dish and bake in the preheated oven for 40 minutes.
  10. After 40 minutes, uncover the dish and continue baking for an additional 30 minutes.
  11. Monitor the dish until a nice golden brown crust appears on the surface and ensure the chicken reaches an internal temperature of 165 degrees Fahrenheit.
  12. Once done, remove from the oven and top the dish with fresh parsley.
