About this box

Inspired by Sammy Davis Jr. and his NY roots. As one of the original champions of the Golden Steer, the bundle pays homage to his support that started it all.

Four of our full-bodied USDA Prime New York Strips, stand above the rest for its boldness and bite combined with tenderness from wet aging over 21 days. We butcher all our meat in-house, which means no one steak is alike.  New York Strips are 14-16 oz.

Cut Selection

Cut from the beef short loin, a popular primal, because it is a relatively unused muscle providing tenderness but not quite as tender as the filet. This cut is a classic that gained its notoriety as a cut from the old steakhouses in New York.

FLAVOR PROFILE

NY Strips have intense flavor thanks to the rich marbling. While it is not the most tender cut, it is beloved for its texture and true beefy flavor. NY Strips are adored because it has similar tenderness as a filet with the marbling from a Ribeye.

Cooking method

Reverse sear

Ingredients

3 garlic cloves, crushed
3 Tbsp butter per steak
4 sprigs of rosemary
Kosher Salt
Black Pepper
Seasoned Salt

COOKING

30 minutes prior to cooking, remove steaks from the refrigerator to come up to room temperature. Preheat the oven to 225° and place an oven rack in the middle of the oven.
