Different Ways to Enjoy Your Lobster

It’s summer, which means we are in the midst of lobster-eating season. In this time of cookouts and pool parties, there’s nothing better than fresh cooked lobster and it’s succulent sweet meat to go hand in hand with refreshing poolside cocktails. 

Once you’ve become a pro at picking out the most delectable lobster to cook (checkout our guide on the top lobsters to purchase, as well as our favorite), now is the time to get creative in the kitchen.

Here are some fun and extremely doable recipes to use lobster in that will take your next summer gathering to a new level.

Prep time: 15 minutes, Cook time: 5 minutes, Serves: 4

Lobster Salad:

If you’re aiming for something easy, light, and with a touch of lemon, try this tasty lobster salad recipe from delish. It’s satisfyingly savory, and yet you’ll still want to wear a swimsuit after indulging in it. 

Ingredients:

  • 1/4 cup mayonnaise
  • 1 stalk celery (finely diced)
  • 2 tablespoons lemon juice
  • 2 tablespoons chives (finely chopped), plus more for serving
  • Kosher salt
  • 3 (12 ounce) lobster tails (steamed, meat removed, and chopped - 3 cups)
  • Butterhead lettuce (for serving)
  • Sliced avocado (for serving)
  • Lemon wedges (for serving)

Directions:

  1. Stir mayonnaise, celery, lemon juice, and chives together in a bowl.
  2. Season it with salt, and then fold in the chopped lobster meat.
  3. Place the lettuce on a serving platter, and then top it with the lobster salad.

Garnish the salad with avocado, more chives, and a squeeze of lemon. Enjoy! 

Prep time: 20 minutes, Cook time: 25 minutes, Serves: 4

Lobster Mac and Cheese:

If you’re hankering for some cheesy comfort food, this mega creamy lobster mac and cheese recipe from Dinner At The Zoo  takes the world of mac and cheese to a whole new level. 

Ingredients:

  • 4 tablespoons butter (divided)
  • 2 tablespoons flour
  • 2 and 1/2 cups water
  • 4 cups milk (whole milk is used in this recipe)
  • 1 pound corkscrew pasta uncooked (such as cavatappi or cellentani)
  • 3/4 teaspoon salt
  • 1/4 teaspoon garlic powder
  • 1/4 teaspoon onion powder
  • 1/2 teaspoon smoked paprika
  • 1/4 teaspoon pepper
  • 4 cups cheddar cheese (shredded)
  • 1 cup mozzarella cheese (shredded)
  • 1 and 1/2 cups cooked lobster meat, plus more for garnish
  • 1/2 cup panko breadcrumbs
  • 2 tablespoons chives (thinly sliced)
  • Cooking spray

Directions:

  1. Preheat the oven to 350°F, and coat a 2 or 3 quart baking dish with cooking spray.
  2. In a large pot, melt 2 tablespoons of butter over medium heat. Then, add the flour and whisk it until it’s combined (about 30 seconds).
  3. Pour in the water, and then whisk it until it’s just thickened.
  4. Add the milk, and then whisk it until it’s combined.
  5. Stir in the pasta, salt, garlic powder, onion powder, smoked paprika, and pepper, and then bring it to a simmer.
  6. Cook it for 10-12 minutes until it’s done, and be sure to stir it occasionally.
  7. Turn the heat to low, and then stir in the cheese. Continue to stir it until the sauce is smooth.
  8. Fold in the lobster meat, and transfer the pasta mixture to the prepared baking dish. 
  9. Melt the remaining 2 tablespoons of butter, and stir it into the panko breadcrumbs. 
  10.  Sprinkle the breadcrumbs over the top of the pasta, and then bake it until the topping is golden brown (about 10-15 minutes). 

Sprinkle it with chives and garnish it with additional chunks of lobster if you desire. Enjoy!

Lobster Rolls:

For the perfect summer meal, try these easy classic lobster rolls from The Suburban Soapbox. Served in toasted rolls and topped with melted butter, these lobster rolls are a true treat. 

Ingredients:

  • 3 (1 - 1 and 1/2 pound) lobsters (steamed and meat removed - about 3 cups)
  • 2 tablespoons good quality mayonnaise
  • 1 tablespoon lemon juice
  • Kosher salt
  • Fresh ground pepper
  • 6 tablespoons butter (melted)
  • 4 New England Style hot dog rolls (you can use regular if you can’t find those)
  • 4 tablespoons fresh chives (chopped)

Directions:

  1. Chop the lobster tail into bite sized pieces and place it in a large bowl with the claw and leg meat.
  2. In a small bowl, whisk the mayonnaise and lemon juice together and season it with salt and pepper (to taste).
  3. Gently toss the dressing with the lobster meat, and then set it aside.
  4. Over medium heat, heat a medium skillet and add 2 tablespoons of butter. Toast the outside of a hot dog roll in it until it’s golden brown. Then, flip it and toast the other side. Repeat this with all of the rolls.
  5. Open the rolls and fill each one with 1/4 of the lobster mixture.

Over each roll, drizzle 1 tablespoon of melted butter and sprinkle 1 tablespoon of chives. Enjoy! 

Prep time: 16 minutes, Cook time: 15 minutes, Serves: 6

Lobster Chowder:

If you’re craving a hearty meal, try this lobster corn chowder recipe from The Spruce Eats. This is where buttery melt-in-your-mouth seafood meets comfort food and magically turns it into comfort food on steroids. 

Ingredients:

  • 2 tablespoons butter (or part of bacon drippings)
  • 5 or 6 green onions (with about 3 inches of green - thinly sliced)
  • 1 rib celery (diced)
  • 3 tablespoons sweet red bell pepper (diced)
  • 2 tablespoons flour
  • 1/4 teaspoon Creole seasoning
  • 3 cups chicken broth
  • 1 and 1/2 cups corn kernels (fresh or frozen and thawed)
  • 1 and 1/2 cups heavy cream
  • 1 and 1/2 - 2 cups cooked lobster meat (diced)
  • 1 medium tomato (seeded and diced), optional
  • Kosher salt (to taste)
  • Freshly ground black pepper (to taste)
  • 1 tablespoon dry sherry, optional
  • Crumbled cooked bacon, optional

Directions:

  1. In a medium saucepan, heat butter over medium low heat, and add the green onion, celery, and bell pepper. Sauté it until the celery is tender, and stir it frequently. 
  2. Add the flour, and stir it until it’s blended. Cook, while stirring, and 1-2 minutes. 
  3. Add the Creole seasoning and chicken broth, and stir and blend together. Then, stir in the corn kernels, and cook, while stirring, until it’s thickened and bubbly.
  4. Stir in the heavy cream, lobster, and tomato. 
  5. Add salt and pepper (to taste). 
  6. Stir in the sherry, and heat it through. 

Top each serving with a little crumbled cooked bacon if you desire or extra chunks of lobster. It’s even better when served with crackers or hot buttered biscuits. Enjoy!
